Mutton Biryani

Actually, the name of this recipe is  Lucknowi Mutton Biryani Pulao. This recipe is different then Mutton Biryani.

Ingredients Frying the onions:

  • 1 cup oil
  • 4 chopped onions

Ingredients Cooking the meat:

  • black pepper
  • 7-8 pieces of cloves
  • 1 tbsp salt
  • 1 tbsp chili powder
  • 2-inch ginger (peeled and cut)
  • A whole bulb of garlic
  • 1 tsp garam masala
  • 1 tsp kewra
  • 1/2 cup cream

Ingredients Boiling the rice:

  • 2-3 pieces of cinnamon
  • 2 big cardamom
  • 5-6 pieces of bay leaves
  • 4-5 cloves
  • 1 tbsp salt
  • 3 cups of soaked rice
  • food colouring (yellow and orange)

Lucknowi Mutton Biryani Polaw Instructions:

  • Fry the onions until they are golden brown When golden brown take them out and leave aside
  • Add 1kg mutton into a cooker and cook until meat is tender
  • Take out the mutton and strain the broth
  • Add the mutton into a cooker The broth from before
  • Add some onions (done before) and cook for 15-20mins
  • When it is only 2 cups of liquid left, take it off the stove and leave it aside
  • Then add 3cups of soaked rice and boil
  • Mix the meat and the boiled rice.
  • Add the remaining oil from the fried onions
  • then, add the food colouring (yellow and orange)
  • In the last, add the fried onions and cover and cook for 20min on low heat
