Afghani Pulao


Afghani Pulao or Kabuli Palaw is a traditional Afghan dish. It is traditionally cooked with beef, mutton, lamb, or chicken along with carrots, spices, and nuts. Once my family had dinner in an Afghani restaurant, I really impressed with the nice sweet smell of rice. After that my wife tried it at home with the same taste. Hopefully, you will enjoy this recipe.

Afghani Pulao Ingredients:

  • 1kg mutton
  • 1-liter water
  • A tsp whole black pepper
  • One tsp salt
  • 1tsp whole coriander
  • 2 pieces of Cinnamon
  • 2 pieces of cardamom
  • 1tbsp Cloves
  • 1tsp cumin seeds
  • 2tsp anise seeds
  • 1 chopped onion
  • 1 bulb of garlic
  • 1/2cup oil
  • 1/4tsp salt
  • 1tbsp soy sauce
  • 1 chopped onion
  • 2 chopped tomatoes
  • water (if needed)
  • 3 cups of soaked rice (sela rice)
  • 2tbsp oil
  • 3 carrots
  • 2tbsp sugar
  • 1/2cup raisins
  • 1/2cup peeled almonds

Afghani Pulao Instructions:

  • Boil lamb meat with onion, garlic and spices (whole seeds) in 1 litre water
  • Strain the broth (meat water) and separate the meat.
  • Fry the boiled meat in pan with oil
  • After light brown colour take the meat out and add onion, tomato in the same oil
  • Add the broth in the fried onion, after boiling add rice
  • When rice boiled add meat keep on low heat.
  • In other pan, fry carrot slices, sugar almonds and raisins
  • Mix the meat and rice properly
  • Put some rice and meat in plate and garnish with fried carrots and nuts
